Keto Peanut Butter Cookies
Two peanut butter cookies are sandwiched together with peanut butter icing.

Instructions:
Cookies

Preheat the oven to 350°F and prepare a baking sheet by lining it with parchment paper.

In a medium-sized mixing basin, combine all of the cookie ingredients and stir until thoroughly mixed.

Using a scoop or your hands, roll the dough into 1 inch balls.

Place the dough balls on a parchment-lined baking sheet and push them down until they are 14 inch thick.

Bake for 15 minutes or until golden brown on top.

Allow 10 minutes for them to cool before taking them from the tray.
Filling

Except for the peanut butter, combine all ingredients in a large mixing basin. Whip the mixture until firm peaks form.

Fold the other ingredients into the whipped cream until barely incorporated.

Half of the cooled cookies should be topped with whipped topping, followed by the remaining cookies.
