Keto Lemon Cookies With Icing (2g Carbs)

These cookies are my favorite because they are full of healthy fats that can help you lose weight and are not as bad for you as butter or other high fat foods. Yummy, healthy and delicious.

These cookies are similar to the Lemon Bars I made for the same blog last year, except that these are given a Keto friendly makeover.

Let’s Talk About Lemons

Before we get into the step-by-step instructions for making keto lemon cookies, let’s address the elephant in the room… Lemons are a fruit, but are they keto-friendly? Yes! Lemons, as a fruit, have a low carbohydrate and sugar content when compared to other citrus fruits such as oranges and grapefruit. One lemon has only 3.3 carbohydrates in its entire juice. For all 20 cookies, roughly 3 teaspoons will be used. Lemons are keto-friendly and good to include in your diet.

Lemons are high in vitamin C and can assist with iron absorption (1). Because a keto diet typically includes a lot of red meat, adding more iron absorption abilities isn’t a terrible idea.

How to Make Lemon Keto Cookies

Keto dishes can be tricky to make, but with our help, you won’t have to make any guesses. We’ve set out the entire recipe, from tools and materials to a detailed description of the baking procedure. These sugar-free, low-carb cookies are soft and dense, making them ideal for a satisfying but light dessert.


Thankfully, this is a simple keto dish that only requires a few “tools.” You’ll need some bowls and a whisk, but other than that, you’ll only need basic kitchen tools.

  • Baking Sheet– If you’re going to prepare these cookies, you’ll need a good baking sheet. The prep time is short, but the small dough balls will require an evenly heated baking sheet.

To make Lemon Keto Cookies, you’ll need the following ingredients.

Delicious and healthful ingredients are the foundation of high-quality keto low-carb baked products. These cookies aren’t any different. You’ll need everything lemon to make lemon cookies and lemon icing!

The dry ingredients are as follows:

  • 1 cup almond flour- These gluten-free keto cookies are made using a combination of almond flour and coconut flour. For the greatest texture, use finely milled almond flour.
  • 1/3 cup coconut flour- This aids in the binding of the cookies and their ability to maintain their ball shape.
  • 1 tsp baking powder- Baking powder gives these cookies a slight fluff.
  • 1/8 teaspoon Himalayan pink salt
  • 1/4 cup erythritol– Erythritol can be used with a variety of sweeteners, including monk fruit and stevia. However, for this recipe, we like to use basic erythritol to ensure consistency.

Ingredients for the Wet Mixture:

  • 4 tbsp softened butter- We adore Kerrygold grassfed butter for its rich richness.
  • 1 large egg
  • 4 teaspoons lemon juice—the fresher the better! These cookies have a wonderful zing from fresh lemon juice.
  • 1 teaspoon lemon zest- The oils in the peel provide a mild lemon flavor to these cookies.
  • 8-10 drops liquid stevia—you can use liquid monk fruit instead, but we think stevia is the best mix of cost and taste.

Lemon Cookies with Low Carb

  1. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Whisk together the two flours, baking powder, and salt in a mixing bowl until well blended.
  3. In a separate bowl, fully mix the softened butter and erythritol. You want the butter to be lighter in color and fluffier.
  4. Now beat in the egg well. Soon after, whisk in the lemon juice, zest, and stevia.
  5. After thoroughly combining the dry ingredients, incorporate them into the butter mixture until a soft dough forms.
  6. Allow the dough to firm up in the refrigerator for about 10 minutes.
  7. Place the cold dough on the baking sheet in small balls, about 1-1.5 inches in diameter (you can use a small cookie scoop for reference).
  8. Bake for 10-14 minutes, checking to see if the cookie is set on the outside. You may also see if they seem golden on the bottom.

What’s the Deal With My Crumbly Keto Cookies?

This is a question that is asked of all keto friendly cookies, not just these low carb lemon cookies. There are two basic reasons why your cookies are crumbling. The most common blunder we see is people attempting to bake low-carb cookies using solely coconut flour. If you use simply coconut flour instead of almond flour, or a combination of the two, the cookie will be dry, dense, and crumbly.

The second error I’ve made is not being patient enough and picking them up too quickly. It’s critical to let your keto baked items cool completely before handling them, whether they’re cookies or bread loafs. Almond flour and coconut flour don’t behave in the same manner that regular all-purpose baking flour does. Before they’re ready to eat, they need to set completely.

What’s the Best Way to Get That Zingy Lemon Flavor (Bottled Lemon Juice)?

Everyone knows that a sweet glaze with a zing of sour creates an irresistible dessert. So, what ingredients should you use to make the greatest lemon flavor? We always believe that the fresher your ingredients are in our low carb/keto baked goods, the better! Lemon juice and lemon zest are used in this cookie batter. The sour pucker factor comes from the lemon juice, while the oils from the lemon peel produce a distinct lemon flavor. To enhance the refreshing lemon flavors, we utilize real lemon juice instead of water in the glaze.

We tried lemon extract, but it didn’t taste as good as fresh lemon. If you prefer the flavor, you are welcome to add a few drops of lemon extract. Lemon essence is usually favored over fresh zest. When it comes to lemon juice, we prefer it fresh. However, if you just have access to bottled lemon juice, the recipe will still work perfectly.

Cookies That Keep Their Form

When I take a keto dessert out of the oven and it hasn’t spread as much as I expected, I find it fascinating. That may be the intention in some cases, such as with these keto lemon cookies, but it isn’t always the case.

So, what is it about this recipe that allows the keto cookies to maintain their shape? It’s simple to figure out once you’ve become comfortable with keto baking. In low-carb baked items, the ratio of almond flour to coconut flour is critical. This recipe contains a lot more coconut flour than other baked products you’ve made before.

These cookies keep their shape when made with a larger ratio of coconut flour (1:3). Coconut flour is quite dry and absorbent on its own, resulting in dense, crumbly baked items. In the case of these keto lemon cookies, however, this is a good thing because the cookie balls won’t spread while baking. We also have other dense cookies that don’t spread, such as our Walnut Snowball Cookies.

Getting the Right Cookie Size Every Time

We are staunch supporters of the well-loved cookie scoop. It guarantees that your cookies will always be the same size. Furthermore, because the cookies are evenly proportioned, the 15-minute cook time should finish all of them at the same time. You won’t have to struggle with burnt or raw cookies any more. Finally, if I haven’t yet persuaded you to buy a cookie scoop, consider the following: When cookie dough is evenly dispersed, the macros and net carbohydrates are also evenly distributed.

Adding Variety to the Flavors

If you try this recipe and decide you want to tweak the lemon flavor, you can easily do so. Another citrus fruit can be used to produce low carb/keto cookies that are similarly wonderful. This glaze, for example, is made with only two ingredients and takes only a few minutes to prepare. With no added work, it transforms these keto lemon cookies. Frosting is similar to icing in terms of ingredients and convenience of use!

The keto lemon cookies are bite-sized for an easy grab-and-go snack, and they also freeze well for meal prep during the week when cooking dinner is all you have time for. These keto lemon cookies, with or without the lemon frosting, are sure to satisfy that sweet and refreshing flavor you love during the summer!

Keto Lemon Cookies

These light and delicious keto lemon cookies are topped with a sweet, lemony glaze and are excellent for a summertime dessert!

  • Preheat the oven to 350 degrees Fahrenheit and prepare a baking sheet with parchment paper.

  • Combine almond flour, coconut flour, baking powder, and salt in a medium mixing basin. Whisk until everything is well blended and the consistency is silky.

  • Softened butter and erythritol should be combined in a separate basin. Beat in the egg well. Whisk in the lemon juice, zest, and stevia until smooth.

  • Combine the dry ingredients until a soft dough forms. Refrigerate for 10 minutes before serving.

  • Place the cold dough on the baking sheet in small balls, about 1-1.5 inches in diameter.

  • Bake for 10-14 minutes, then remove from oven to cool while you prepare the glaze.

  • In a small bowl, combine the powdered sweetener and 1 tablespoon lemon juice. Stir until the mixture is completely smooth. If necessary, add more lemon juice. Spread on the cookies after they have cooled.

  • Garnish with lemon zest before serving if preferred. Refrigerate for up to one week in an airtight container.
