Say hello to a low-carb meatloaf that won’t dry out! Most keto meatloaf recipes struggle to replace typical meatloaf breadcrumbs with a low-carb breadcrumb substitute.

We’ll teach you how to boost the taste of your favorite comfort meal while removing the carbohydrates.

You can find keto copycat dishes in our first cookbook, Keto Made Easy, which includes another keto meatloaf recipe that utilizes hemp hearts instead of breadcrumbs.

Pick a Keto Breadcrumbs Substitute

You have a few choices here, but only a few of them are viable. Almond flour, coconut flour, hemp hearts, crushed flaxseed, and even omitting the bread crumbs entirely are common breadcrumb substitutes for keto meatloaf.

Make sure you don’t make the same mistake! If you don’t use breadcrumbs, your meatloaf will be rough, dry, and thick.

Flour from Almonds

The worst choice is almond flour. It absorbs very little liquid, adds a lot of calories to your dish, and is very costly. Many keto recipes automatically substitute almond flour for any high-carb component, which isn’t a smart idea if you want to eat delicious food. This recipe may be made without the almond flour.

Flour made from coconut

Coconut flour, on the other hand, has the exact opposite issue as almond flour. It absorbs a lot of liquid and completely changes the texture of the meal. While coconut flour aids in the moisture retention of the keto meat loaf, it also tends to throw the whole meal off in an inexplicable manner.

golden flaxseeds

Flaxseed, ground

Now we’re getting to the good stuff. The finest choice is ground flaxseed, but we’ll get to that in a minute. The keto meatloaf has a nice nutty taste thanks to the ground flaxseed. It also reduces the carb content of the meat loaf to almost zero net carbohydrates.

The disadvantage is that it makes this meatloaf dish excessively chewy. While flaxseeds have numerous advantages, one of them is that they make excellent meatloaf.

Hearts of Hemp

If you want to make your meatloaf keto, hemp hearts or hemp seeds are a great option. They have a nice taste and help to keep a lot of the moisture in this keto dish.

While hemp hearts aren’t our first pick, they can make a delicious keto meatloaf dish and should be explored.

fryer full of pork being made

Rinds of pork

The winner of the breadcrumb replacement contest has been announced. Pork rinds, processed in a food processor, are an excellent method to keep your keto meatloaf moist and flavorful without adding a foreign ingredient.

Actually, they enhance the taste of the ground beef. The best choice is to use unflavored pork rinds. Check the sodium level to determine how much salt you’ll need for the remainder of the meatloaf recipe.

Keto Meatloaf: How to Make It

One of the simplest dishes to adapt for a low-carb diet is keto meatloaf. To begin with, it’s 95 percent keto-friendly; the only issue is the breadcrumbs.

To create keto meatloaf, you’ll need to locate a good substitute for Italian breadcrumbs that won’t cause your meatloaf to dry out.

Parmesan Cheese, grated

This helps to replace the breadcrumbs and gives the low-carb meatloaf a lovely mild taste. While it isn’t strictly essential, it goes well with the spices in this dish (onions or 1 teaspoon onion powder, 1 teaspoon garlic powder, and tomato paste).

Ground Beef (85/15)

Ground beef with an 85/15 fat-to-protein ratio is ideal for this dish. Normally, recipes would ask for 80/20 or 90/10, but we’ve tested both and aren’t happy with the outcomes. 85/15 may be found at most supermarkets.

If you were to pick between the two, select 90/10. This recipe calls for 80/20 ground beef, which is excessively fatty and will result in a lot of fat leaking out of your meat loaf.

I’m not a purist, but I’m not a fan of ground turkey or ground chicken. They’re too skinny for this dish, and it’ll turn out extremely dry.

If you have any further concerns regarding the best kind of ground beef to use for this dish, see our helpful ground beef guide.

For our keto meatloaf, we’ve had the greatest success using ground chuck, but other meats work well as well. The article contains a wealth of information about saturated fat, cholesterol, and the nutritional value of ground beef.

mixing bowl full of ingredients

Mix all of your ingredients together.

In a mixing bowl, combine the other ingredients, including one egg (we usually use big eggs), and mix with your hands. It’s impossible to prepare beef loaf without using your hands. The beef loaf mixture may be ready to go in only 10 minutes of prep time.

Get ready for the oven.

For this dish, we’ll preheat the oven to 375 degrees. Many recipes call for a 350°F oven, but we’ve found that a little higher temperature yields superior results.

On a baking sheet, mould the meatloaf mixture into the desired shape by hand, or put the meatloaf mixture into a greased loaf pan.

Before baking, press the meatloaf fully into the pan and then turn it over onto a baking sheet. Your meatloaf should not be baked in a loaf pan!

Bake, then serve with the Ketchup Mixture on top.

Preheat the oven to 350°F and bake the low-carb meatloaf for 20 minutes. This will take approximately half the time we planned for cooking. We’ll put the ketchup mixture on top of the meatloaf after it’s been cooking for 20 minutes.

People disagree on whether they like a pure ketchup taste or something sweeter and spicier, more akin to a barbecue sauce, in their meatloaf. I usually go with the later option.

You may use sugar-free ketchup, reduced-sugar ketchup, or tomato paste for the tomato foundation. We’re going to use tomato paste in this dish since it has the most tomato taste while having the fewest carbohydrates.

Add some vinegar, Worcestershire sauce, and possibly a few drops of liquid stevia to finish the tomato glaze. The stevia gives the meatloaf recipe a lovely sweetness.

Top the meatloaf with this sauce when it comes out of the oven, then return it to the oven for the remaining 15 minutes of cooking time.

after cooling meatloaf

Allow to cool before serving.

When the meatloaf has been in the oven for 35 minutes, use a meat thermometer to check the internal temperature.

Make sure the internal temperature reaches 160°F, but bear in mind that the temperature will continue to increase after it is removed from the oven. A temperature of about 155 degrees is ideal.

Allow at least 1 minute for the keto meatloaf to cool before slicing, otherwise you will lose a lot of the liquids.

You’re probably thinking what side dishes to serve with this low-carb meatloaf meal. Fortunately, you’ve arrived to the correct location. There are a plethora of side dishes that go well with keto meatloaf. Here are a few of our favorites:

Recipes for Keto Meal Prep

If you didn’t know, our food blog has a meal prep area that you may visit every Sunday when you need to prepare for the week.

We often perform meal prep to remain on track with our keto diet and free up time to be with our kid, Theo, or get some work done.

Some of our favorite Sunday keto meal preps that will keep in the fridge for the whole week and reheat beautifully in the microwave are:

What Is the Carbohydrate Content of Meatloaf?

Another excellent question, and my go-to answer when it comes to carbs, is “it depends.” This is because it’s all about the ingredients you use!

A breadcrumb substitute like ground pork rinds has no net carbohydrates, while almond flour has one to three net carbs per serving.

The second area where carbohydrates accumulate is in any diced vegetables you add to the meatloaf before baking.

This will most likely be onion and celery, and although they provide a lot of flavor, you can skip them and still have a great meatloaf!

The third and last area where carbohydrates may pile up is with the toppings. Because tomato has a greater sugar content, this is the primary source of carbohydrates.

You’ll end up with a high fat, high protein, low carb meatloaf no matter what you do, so don’t sweat the little things! And a topping like the one we’ve provided below adds a lot of flavor for a little amount of carbohydrates.

Free Form vs. Loaf Pan?

We use a pan in the recipe video since it’s a fast method to achieve the loaf form, and Matt’s mother made it that way when he was a child.

You can’t go wrong with a free-form loaf made with your hands, however. You may even divide the dough into 3-5 tiny loaves, one for each family member.

It all boils down to how much time you have to prepare. Free forming is considerably faster and results in a more rustic-looking meatloaf.

It’s worth noting that no matter which manner you shape it, there will be a lot of fat runoff since ground beef has a greater fat content (we use 85/15).

This is quite OK, and you may even use it as a side dish or to top your baked bread before serving!

In conclusion

Keto meatloaf is one of those dishes that you become more comfortable with with each attempt. This dish has been a staple in our keto dinner rotation for over a year, and each time we make it, it gets better.

If you want to adhere to your keto diet for the long haul and avoid feeling deprived, comfort foods are essential.

You’ll be OK as long as you avoid a couple of the most frequent keto meatloaf blunders. The most important is choosing the appropriate filler component to keep your meatloaf moist.

Almond flour and coconut flour should be avoided. Make sure your meatloaf reaches the correct internal temperature, then let it cool for 10 minutes before slicing.
