One of the simplest dishes to adapt for a low-carb diet is keto meatloaf. To begin with, it’s 95 percent keto-friendly; the only issue is the breadcrumbs.

To create keto meatloaf, you’ll need to locate a good substitute for Italian breadcrumbs that won’t cause your meatloaf to dry out.

This helps to replace the breadcrumbs and gives the low-carb meatloaf a lovely mild taste. While it isn’t strictly essential, it goes well with the spices in this dish (onions or 1 teaspoon onion powder, 1 teaspoon garlic powder, and tomato paste).

Ground Beef (85/15)

Ground beef with an 85/15 fat-to-protein ratio is ideal for this dish. Normally, recipes would ask for 80/20 or 90/10, but we’ve tested both and aren’t happy with the outcomes. 85/15 may be found at most supermarkets.

If you were to pick between the two, select 90/10. This recipe calls for 80/20 ground beef, which is excessively fatty and will result in a lot of fat leaking out of your meat loaf.

You may use sugar-free ketchup, reduced-sugar ketchup, or tomato paste for the tomato foundation. We’re going to use tomato paste in this dish since it has the most tomato taste while having the fewest carbohydrates.

Add some vinegar, Worcestershire sauce, and possibly a few drops of liquid stevia to finish the tomato glaze. The stevia gives the meatloaf recipe a lovely sweetness.

Top the meatloaf with this sauce when it comes out of the oven, then return it to the oven for the remaining 15 minutes of cooking time.

When the meatloaf has been in the oven for 35 minutes, use a meat thermometer to check the internal temperature.

Make sure the internal temperature reaches 160°F, but bear in mind that the temperature will continue to increase after it is removed from the oven. A temperature of about 155 degrees is ideal.

Allow at least 1 minute for the keto meatloaf to cool before slicing, otherwise you will lose a lot of the liquids.

We use a pan in the recipe video since it’s a fast method to achieve the loaf form, and Matt’s mother made it that way when he was a child.

You can’t go wrong with a free-form loaf made with your hands, however. You may even divide the dough into 3-5 tiny loaves, one for each family member.

It all boils down to how much time you have to prepare. Free forming is considerably faster and results in a more rustic-looking meatloaf.

It’s worth noting that no matter which manner you shape it, there will be a lot of fat runoff since ground beef has a greater fat content (we use 85/15).

This is quite OK, and you may even use it as a side dish or to top your baked bread before serving!
